Chicken Stir Fry
INGREDIENTS:
-1/2 chicken breast fillet (cut in small cubes)
-1 spring onions (chopped finely)
-1 onion (brunoise 5mm x 5mm x 5mm)
-1 carrot (julienne 40mm x 5mm x 5mm)
-1/4 red capsicum (julienne)
-1 zucchini (sliced diagonally)
-1T oyster sauce
-1T soy sauce
-1 T olive oil
-1 packet chicken 2 minute noodle
METHOD:
1. Prepare all ingredients
2. Heat oil in a frypan
3. Add chicken and stir fry until just brown- remove meat and set aside- drain off oil
4. Add onion, carrot, capsicum and spring onion to pan and stir fry until nearly tender
5. Contue cooking vegetables until just tender and then add chicken and continue to stir until warmed enough
6. Add soy sauce and oyster sauce and stir through
7. Cook noodles according to packet instructions
8. Serve immediately on a bed of noodles
