Creamy Chicken penne
INGREDIENTS:
-150g penne pasta
-1tsp oil
-1/2 onion (finely chopped)
-1tsp crushed garlic
-150g chicken fillet (sliced)
-200mL light and creamy evaporated milk
-2tsp cornflour
-Pinch of salt and pepper
-1 1/2 cup of shredded spinach or baby spinach leaves
-1T fresh grated parmesan cheese
METHOD:
1. Place a large saucepan on to boil. Add pasta and cook until tender
2. Heat the oil up in the pan, add onion and garlic and cook for 1 minute. Add chicken and mushrooms and cook until chicken is browned
3. Combine the milk, mustard, salt, pepper and cornflour. Add chicken mixture. Add the spinach and boil
4. Simmer for about 2 minutes until sauce slightly thickens
5. Serve pasta and garnish with grated parmesan
