Vegetable Platter with Cream Cheese Dip
VEGETABLE PLATTER
INGREDIENTS:
- 1/2 small carrot
-1/4 zucchini
-1/2 red capsicum
-1/2 stick celery
-1/2 cup broccoli florets
METHOD:
1. Cut the carrot, zucchini and celery into pieces about 5cm long.
2. Cut each vegetable into 1cm thick sticks.
3. Cut the capsicum into thin sticks the same length as the carrot and zucchini.
4. Microwave the broccoli for 2 minutes on high until just cooked, but still crispy.
5. Arrange the vegetables on a platter and serve with cream cheese dip.
CREAM CHEESE DIP
INGREDIENTS:
-100g of soft cream cheese
-1 slice of ham (chopped)
-2T celery (chopped)
-1/4 cup of corn kernels
-2tsp parsley
METHOD:
1. Place all of the ingredients in food processor for 1-2 minutes or until smooth.
2. Serve in a small bowl with the vegetables.
