Tandoori Chicken
INGREDIENTS:
-1/2 cup yogurt
-1 clove garlic (crushed)
-1t grated fresh ginger
-2t turmeric
2t garam masala
-2 chicken thigh fillets (cut into 2cm cubes)
- 1/2 red capsicum (cut into 2.5cm squares)
-1/2 green capsicum (cut into 2.5cm squares)
-1 onion (cut into thin wedges)
METHOD:
1. Combine yogurt in small bowl with garlic, ginger, turmeric and garam masala. Set aside
2. Thread chicken, capsicum and onion alternately onto soaked skewers
3. Brush yogurt mixture lightly over skewers
4. Place skewers on cold, lightly oiled grill tray and cook. Brushing with yogurt mixture occasionally, under high heat for 5 minutes and then turn. And cook, brushing again with yogurt mixture for another 5 minutes or until chicken is tender
6. Serve with rice or wrap in tortilla
