Mexican Mince with Nacho
INGREDIENTS:
-1/2 small onion
-2t oil
-200g mince
-3/4 cup tomato puree
-1/2t garlic
-1T taco seasoning
-2 cup corn chips
-1/2 cup grated cheese
-2T sour cream
-2T mild chili sauce
METHOD:
1. Preheat oven to 180°C
2. Chop onion and fry with oil
3. Add the mince and stir until browned
4. Add tomato puree and garlic to mince and stir through
5. Mix taco seasoning with 2T of water and add to the meat mixture, stir through. Simmer on a low heat for 5 minutes
6. In a casserole dish, place a few corn chips then add the meat mixture. With the remaining corn chips, stick into the top of the meat mixture. Spinkle the top with cheese
7. Bake in the oven for 10 minutes. The cheese should be melted and golden
8. Serve with sour cream and chilli sauce
